This Cashew Cheese Dipping Sauce is the perfect partner to Roasted Sweet Potato Wedges, baked potatoes, and veggies like asparagus and Brussels sprouts.
Ingredients:
1 cup raw cashews, soaked
⅓ teaspoon sea salt
1-1/2 tablespoons fresh lemon juice
½ cup filtered water
Method:
Place all ingredients in a high-speed blender and blend for 1 minute. At this point, you can taste for texture and flavor, and adjust recipe accordingly. You may need to process for more than 1 minute to get the texture smooth and silky.
