Pickled Red Onion

Quick and easy way to pickle red onions. They make a great condiment to pizza, salads, or anything else you can think of.
Ingredients:
  • 1 medium to large Red Onion
  • 1 t. Salt
  • 1 t. Sugar
  • 1 C. White Balsamic or White Wine Vinegar
Method:
  1. Slice onion into rings or half moons. Blanch in boiling water for 30 seconds.
  2. In a mason jar dissolve salt and sugar in the vinegar
  3. Place the onions in the mason jar with the vinegar mixture. Put lid on and shake to mix.
  4. Refrigerate. Will keep 1-2 weeks in fridge.
