Mustard Cream Pan Sauce

Quick and easy pan sauce for pork or chicken. Also Delicious to steam mussels in.
Ingredients:
  • 8 oz. Heavy Cream
  • 1 oz. Cognac or Brandy
  • 1 T. Whole Grain Mustard
  • Sal & Pepper to taste
Method:
  1. Pour the Cognac into the pan to deglaze and scrape up any browned bits
  2. Add the heavy cream and 1 T. of whole grain mustard, heat on high to reduce in half
  3. Season to taste with salt and pepper
